Healthy Vegan Baked Sweet Potato Recipe

Here’s another easy recipe that is one of my favorite dishes. This dish is an attention grabber and looks a lot more fancy than what it is. We all know the amazing benefits sweet potato contains. It is rich in beta-carotene which is a form of vitamin A and the list of vitamins that it contains goes on and on. It is also a great source of complex carbohydrates which are the preferred form of carbs. Complex carbohydrates contain many minerals and fibers that refined sugars do not. They are also better than simple carbohydrates because the body takes longer to digest complex carbs. This insures that the sugar crash that we typically get after eating simple sugars won’t occur. The body will evenly absorb the sugars and therefore blood sugar levels will not spike drastically. Yay for complex sugars!

Anyway lets jump right into the recipe! All you’re going to need are sweet potatoes, hummus, lemon juice, tomatoes, green onions, salt and some kind of garlic powder.

First, start off with four medium sized sweet potatoes. Cut them in half vertically and bake facing down on 375 degrees Celsius for about 40-50 minutes until they are easily poked with a knife. We lined the pan with foil and spread some Canola oil in order for the potatoes not to stick.

While the sweet potatoes are baking, start by chopping up the toppings. We chopped half a large sized tomato into small pieces. We are going to top these tomatoes onto the sweet potato so it’s critical to chop them up small.
IMG_1704.JPG-1Then chop a handful of green onions again finely. We only used the green part of the onion. We love adding green onions but basil will work perfectly as well.

green onion healthy vegan recipeAbout 10 minutes before the sweet potatoes are ready, you want to mix up the hummus sauce. Hummus tends to oxidize quite quickly so that is why we like to wait until the last minute. You can use any kind brand of hummus you like. We used about half a cup of hummus, and then we added the juice of half a lemon. For seasoning all you’re going to need is salt, we added about a full teaspoon of salt. Because we don’t salt the potatoes we like for the hummus sauce to be a bit more salty. We then used Flavor God, Lemon Garlic Seasoning to add that perfect hint of garlic. Here’s what they look like right out of the oven. The inside should be squishy enough for it to be easily scooped out by a spoon. So, once they are out of the oven we like to scoop the middle part out and mush it up a little. This creates a nice crater for all of the toppings to go into.

So, this is what it looks like without the hummus sauce. After this, all that is left is for the hummus sauce to be drizzled on top of the potatoes!
